  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, mash the avocado until completely smooth.
  3. Melt 1/2 cup chocolate chips with coconut oil using a double boiler or microwave.
  4. Mix melted chocolate mixture into mashed avocado. Add sugar, vanilla, and plant milk.
  5. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  6. Fold dry ingredients into wet ingredients until just combined.
  7. Fold in remaining chocolate chips and walnuts if using.
  8. Pour batter into prepared pan and smooth the top.
  9. Bake for 22-25 minutes, or until a toothpick comes out with a few moist crumbs.
  10. Let cool completely before cutting into squares.

Important: Don't overbake! Brownies will continue to set as they cool.
